  • 2 large egg yolks
  • ¼ cup granulated sugar
  • ½ cup heavy whipping cream
  • 1 cup milk
  • Pinch of salt
  • ¼ tsp vanilla extract
  • Ground cinnamon (for topping)
  • Alcohol, such as bourbon (optional)
Step Description

In a small saucepan over low heat, combine milk, a pinch of salt, and vanilla extract. Stir gently until warm.

In a separate bowl, whisk together egg yolks and sugar until smooth. Gradually add this mixture into the warm milk in batches while stirring constantly.

Cook the combined mixture over medium heat, stirring continuously, until slightly thickened but not boiling. Use your ThermoPro TP19H Instant-Read Thermometer to ensure the mixture reaches 160°F (71°C) without exceeding it.

Remove from heat and stir in heavy cream. Add a splash of bourbon or your favorite spirit if desired. Chill in the refrigerator for at least 2 hours.

Before serving, garnish with whipped cream and a dash of cinnamon. Serve cold and enjoy!
