Boil beef tongue with carrots, celery, garlic, onion, and peppers for 3 hours over medium heat, or pressure cook for 1½ hours until tender.

Allow the tongue to cool slightly, then peel off the outer skin. Rub with your favorite beef seasoning or dry rub.

Smoke at 225°F (107°C) until the internal temperature reaches 130°F–150°F (54°C–66°C) using the
