Recipe Preparation
  • 1–2 lb. chicken breast, cut into tenders
  • 1 cup all-purpose flour
  • 1 cup cornstarch
  • 1½ tbsp onion powder
  • 1½ tbsp garlic powder
  • 1½ tbsp salt
  • 1 tsp black pepper
  • 2 tsp paprika
  • 1 tsp chili powder
  • Buttermilk (for marinating)
  • 1 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 habanero, diced
  • ½ cup grated parmesan (or more)
  • Juice from ½ lemon
  • 2 whole roasted garlic bulbs
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes
  • ¼ tsp oregano
  • ¼ tsp basil
Step Description
1
Preheat oven to 400°F (204°C). Trim tops off garlic bulbs, lightly spray with olive oil, season with salt and pepper, wrap loosely in foil and roast for 40–50 minutes.
2
Place chicken tenders in buttermilk and marinate in the fridge for at least 30 minutes.
3
In a bowl, mix flour, cornstarch, onion powder, garlic powder, salt, pepper, paprika, and chili powder.
4
Remove chicken from buttermilk and coat in flour mixture. Optionally skewer for easier handling. Set aside.
5
Make the garlic parmesan sauce: Combine mayonnaise, apple cider vinegar, diced habanero, grated parmesan, lemon juice, roasted garlic, and seasonings. Stir until smooth.
6
Fry the chicken in oil over medium heat until golden brown. Use a ThermoPro Lightning Instant Thermometer to ensure internal temperature reaches 165°F (74°C).
7
Brush garlic parmesan sauce onto fried tenders. Broil for 1–2 minutes for a crispy, flavorful finish. Serve hot!
