Recipe Preparation
- 1–2 lb. chicken breast, cut into tenders
- 1 cup all-purpose flour
- 1 cup cornstarch
- 1½ tbsp onion powder
- 1½ tbsp garlic powder
- 1½ tbsp salt
- 1 tsp black pepper
- 2 tsp paprika
- 1 tsp chili powder
- Buttermilk (for marinating)
- 1 cup mayonnaise
- 1 tbsp apple cider vinegar
- 1 habanero, diced
- ½ cup grated parmesan (or more)
- Juice from ½ lemon
- 2 whole roasted garlic bulbs
- ½ tsp sea salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes
- ¼ tsp oregano
- ¼ tsp basil
Step Description

Preheat oven to 400°F (204°C). Trim tops off garlic bulbs, lightly spray with olive oil, season with salt and pepper, wrap loosely in foil and roast for 40–50 minutes.

Place chicken tenders in buttermilk and marinate in the fridge for at least 30 minutes.

In a bowl, mix flour, cornstarch, onion powder, garlic powder, salt, pepper, paprika, and chili powder.

Remove chicken from buttermilk and coat in flour mixture. Optionally skewer for easier handling. Set aside.

Make the garlic parmesan sauce: Combine mayonnaise, apple cider vinegar, diced habanero, grated parmesan, lemon juice, roasted garlic, and seasonings. Stir until smooth.

Fry the chicken in oil over medium heat until golden brown. Use a

to ensure internal temperature reaches 165°F (74°C).

Brush garlic parmesan sauce onto fried tenders. Broil for 1–2 minutes for a crispy, flavorful finish. Serve hot!
