Recipe Preparation

Ribs Ingredients:

  • 1 St. Louis full-slab pork spare ribs (3-3¼ lbs.)
  • Pork seasoning
  • Butcher’s twine
  • Barbecue sauce

Mac & Cheese Ingredients:

  • 1 box (8 ounces) elbow macaroni
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • Ground black pepper to taste
  • 2 cups milk
  • 2 cups shredded cheddar cheese
Step Description
1
Take a rack of pork rib and remove the membrane and season with your favorite rub. Use twine to tie it together to form a crown.
2
Smoke it at 250°F (121°C) for three hours.
3
Apply the barbecue sauce, and return it to the smoker for another two hours.
4
As the ribs cook, make the mac & cheese by combining butter, flour, milk, and cheddar cheese in a pan. Once it has melted down, add a block of cream cheese, salt and pepper, and then finally the cooked noodles.
5
Use a new ThermoPro Lightning Instant-Read Meat Theremometer to check that the ribs have reached an internal temperature of 180°F (82°C).
6
Remove from heat. Fill your crown with mac and cheese, top with bacon, and serve.
