- 2 lbs small sirloin steak
- 1 1/2 lbs garlic

Peel garlic cloves. Add a pinch of salt and cooking oil. Blend in a food processor until smooth, thick, and paste-like, forming a rich garlic paste.

Pat the steak surface dry.
Evenly coat with the prepared garlic paste, ensuring full coverage. Refrigerate 32-39°F (0–4°C) on a well-ventilated rack. Marinate for 48 hours to allow flavors to penetrate and achieve slight dehydration, enhancing meat firmness and aroma.

After 48 hours, remove the steak and gently wipe or pat off any residual garlic with paper towels. Evenly sprinkle sea salt on both sides for final seasoning. Insert the ThermoPro TP970 TempSpike Plus and set the alert temperature to 130°F.

Light the charcoal grill. Place the steak on the grill to develop a caramelized crust through the Maillard reaction. Remove immediately from heat once the target temperature is reached.

Let the steak rest for 5 minutes to redistribute juices. Trim off excess fat, slice, and plate. Serve with roasted vegetables or a red wine sauce.
