- 5 cups all-purpose flour
- 2 tsp. baking soda
- 4 tsp. ground cinnamon
- 3 tsp. ground cloves
- 1 tsp. ground nutmeg
- 1 tsp. ground ginger
- ½ tsp. Kosher salt
- 2 cups dark brown sugar (lightly packed)
- ½ cup vegetable oil
- ⅔ cup unsulfured molasses
- 2 eggs (large, room temperature)
- 2 ½cups chopped crystallized ginger
- granulated sugar (for rolling the cookies or dusting)

Step 1: Prepare your equipment
Baking comes with preparing a variety of kitchen tools and equipment. Ready your spatula, mixing bowls and molds and set them aside. Preheat the oven to 350° F and use your reliable food thermometer (preferably with a long probe) to measure the correct temperature. Then, line 2 sheet pans with parchment paper.
