Ingredients

  • 5 cups all-purpose flour
  • 2 tsp. baking soda
  • 4 tsp. ground cinnamon
  • 3 tsp. ground cloves
  • 1 tsp. ground nutmeg
  • 1 tsp. ground ginger
  • ½ tsp. Kosher salt
  • 2 cups dark brown sugar (lightly packed)
  • ½ cup vegetable oil
  • ⅔ cup unsulfured molasses
  • 2 eggs (large, room temperature)
  • 2 ½cups chopped crystallized ginger
  • granulated sugar (for rolling the cookies or dusting)
  • icing for finishing touches

Procedure

Step 1: Prepare your equipment

Baking comes with preparing a variety of kitchen tools and equipment. Ready your spatula, mixing bowls and molds and set them aside. Preheat the oven to 350° F and use your reliable food thermometer (preferably with a long probe) to measure the correct temperature. Then, line 2 sheet pans with parchment paper.

Step 3: Mold the dough

Scoop the dough using 2 spoons or a small ice cream scoop if you’re going for the classic circular cookie shapes. With your hands, you can roll each cookie into a ¾ ball then flatten it lightly using your fingers. At this point, you can put a splash of granulated sugar on the cookies’ side then set it aside as you complete other batches.

If you’re going to use a variety of mold, it’s better to have your dough as one big dough and flattened with half an inch thick. Use a rolling pin to flatten it and have fun cutting the dough using your cookie cutters or cookie molds.

Step 4: Bake the cookies
