STEP 1:
Set grill for medium-high direct heat, and grill the asparagus for 1-2 minutes. Remove from grill and let cool.
STEP 2:
Butterfly the flank steak. Season generously with salt and pepper on both sides. On one side, place the cheese and grilled asparagus.
STEP 3:
Roll the flank steak around the cheese and asparagus as tightly as possible, and tie it with twine. Insert a ThermoPro TempSpike cooking thermometer to help you monitor the steak’s internal cooking temperature during the cooking process.
STEP 4:
Place the rolled-up flank steak on grill. Sear on all sides. Using the TempSpike, cook the steak until it reaches an internal temperature of 130°F (54°C) for medium-rare level of doneness. If not cooked to your preference, cover and continue to cook.
STEP 5:
Remove from grill and rest for 5–10 minutes. Then slice and serve.
