STEP 1:
Preheat oven or grill to 350°F (177°C).
STEP 2:
Score the top of the Brie cheese by lightly cutting slits into it. Don’t cut too deep. Place the cheese in an oven-safe skillet or dish. Top it with wine and drizzle with honey.
STEP 3:
Insert a probe from a ThermoPro TP25 into the Brie cheese, and transfer to the oven. Bake until it reaches 110°F (43°C). Start to watch it at this point. Remove from oven once the desired gooeyness has been achieved. Don’t go over 130°F (54°C) or it will melt completely.
STEP 4:
Garnish with thyme if desired. Serve with crostini, apples, or crackers.
NOTES:
*All Brie cheese has a blooming rind that is edible.
*Add nuts or dried fruit if desired.
*Grapes are also great with Brie.
*For a savory version, bake as shown above, and immediately top with pesto, roasted garlic cloves, and red pepper flakes.
