Bacon-Wrapped Pork Tenderloin

Recipe Preparation
- 1½ lbs pork tenderloin
- ½ lbs bacon
- 3 potatoes
- 1½ tsp salt
- 1 tsp black pepper
- 2 tsp onion powder
- 2 tsp paprika
- 3 cloves garlic
- 1 red bell pepper
- 1 carrot
- 1 white onion
- 5 oz white mushrooms
- 6 oz mozzarella cheese
- 1 tbsp Dijon mustard
- 1 tbsp whole grain mustard
- 1½ tbsp apple cider vinegar
- 3 tbsp honey
- 1½ tbsp soy sauce

Filling: Heat olive oil in a skillet. Add chopped onion, white mushrooms, red bell pepper, carrot, and garlic. Saute until the vegetables are soft. Season with salt and black pepper.

Prepare the Pork: Butterfly the pork tenderloin lengthwise. Season with garlic powder, paprika, salt, and black pepper. Spread the cooked vegetable filling inside the pork, then top with shredded mozzarella cheese. Roll up and wrap the tenderloin completely with bacon.

Bake: Place the stuffed and wrapped pork tenderloin along with the potatoes in a preheated 350°F (175°C) oven. Roast until the internal temperature of the meat reaches at least 160°F (71°C). Use ThermoPro TP19 Meat Thermometer to make the right temperature has been reached.

Finish & Glaze: Brush the pork with the mustard glaze and broil on high for about 5 minutes to caramelize the surface.

Mustard Glaze: Combine Dijon mustard, whole grain mustard, apple cider vinegar, honey, and soy sauce in a small saucepan. Simmer until thickened.
