Caribbean-Inspired Roasted Chicken with Green Seasoning

Recipe Preparation
  • 1 chicken, whole
  • 1/4 cup chicken broth
  • Onions, cut
  • Bell peppers, cut
  • Lemons, cut
  • Lime, cut

Caribbean Green Seasoning:

  • 1 bunch cilantro
  • 1/2 bunch parsley
  • 4 green onions
  • 1 head garlic
  • 10 sprigs fresh thyme
  • 1 stalk celery
  • 1 small onion
  • 2 habanero peppers
  • 1/2 red bell pepper
  • 1/2 cup green pepper
  • Salt to taste
  • 1 tbsp olive oil

Seasoning:

  • 1/4 cup chicken broth 
  • 1 tsp salt 
  • 1 tsp pepper
  • 1/4 tsp dried thyme
  • 1/2 tsp smoked paprika 
  • 1/4 tsp cayenne pepper
  • 1/2 tsp all spice
  • 1/2 tsp ground ginger

Add the ingredients for the Caribbean green seasoning to a food processor, taking sure to chop the larger ingredients into smaller portions. Blend well and set aside.

Prepare the chicken using the spatchcock method by using a pair of strong kitchen shears to cut and remove the backbone, and then flip over to crack the breastbone. Liberally apply the green seasoning to both sides of the flattened chicken.

Lay the prepared chicken on a bed of cut onions, bell peppers, lemons, and lime in a flat cooking pan. Mix together salt, pepper, dry thyme, smoked paprika, cayenne pepper, all spice, and ground ginger to season the chicken.

To accurately monitor the internal cooking temperature, insert ThermoPro TP962 Twin TempSpike Wireless Meat Thermometer probes into the thickest part of each chicken breast. Add chicken broth to the pan and cook at 375°F (191°C) oven until the Twin TempSpike measures the internal temperature to be 165°F (74°C).
