Cheesy Chicken Thigh Sandwich

Recipe Preparation
  • 2 boneless chicken thighs
  • 2 tbsp teriyaki sauce
  • 1 loaf of bread
  • 1 whole garlic bulb
  • 3 shallots
  • 1 tsp olive oil
  • 1/4 tsp salt
  • 1/3 tsp black pepper
  • 1/2 cup butter
  • 1/3 tsp crushed red pepper flakes
  • 2 cups mozzarella cheese
  • 1/3 tsp chopped parsley

Marinate the Chicken: Debone the chicken thighs and marinate them in teriyaki sauce for 30 minutes. After marinating, bake in a preheated oven at 360°F (182°C). Use  the ThermoPro TempSpike Plus Truly Wireless 600-ft Meat Thermometer to make sure the chicken thighs are cooked to ideal temperature. Insert the probe to the thickness part of the thigh and set the target to 165°F (74°C).

Roast the Garlic & Shallots: Season the garlic and shallots with a small amount of salt, black pepper, and olive oil. Wrap them in aluminum foil and roast in the oven for 30 minutes.

Prepare the Garlic Butter: Mix the butter with the roasted garlic and shallots, crushed red pepper flakes, salt, and black pepper until smooth. Spread this mixture evenly on the bread.

Assemble & Bake: Place the baked chicken on the bread, sprinkle mozzarella cheese on top, and bake until the cheese is fully melted. Remove from the oven and garnish with chopped parsley.
