- 2 thick-cut pork chops, 1 ½ inch thick
- 2 tbsp olive oil
- 3/4 tsp meat seasoning
- 1 pineapple, cored and sliced
- 1/2 medium onion, sliced
- 3/4 cups of Swiss and Fontina cheese (grated)

Season the pork with olive oil and seasonings on all sides. To monitor the meat as it cooks, insert probes for the ThermoPro Twin TempSpike 500-ft Wireless Dual-Probe Meat Thermometer into two of your pork chops.

Heat up an oven-safe skillet over medium heat. When it is hot, add the olive oil and place the pork chops into the pan. Cook until golden brown, or 2 to 3 minutes.

Flip the chops so that the seared side is facing up. If there is a fattier side of the pork, use kitchen tongs to hold the chops, fat-side-down until it sizzles and browns slightly, or about 30 seconds.

To finish cooking the lamb, pre-heat the oven to 400°F (204°C). Place the skillet back over medium heat and toss in the onions and pineapple. Cook them for 3 to 4 minutes until they soften a little. When the pineapples are tender, and the onions are soft, turn off the heat.

When the pork chops are cool enough to handle, spread the cheese and onion mixture.

Arrange the remaining pineapples and onions in the middle of the skillet, creating a bed for the pork chops. Place the pork down onto the pineapples and onions.

Bake until your ThermoPro Twin TempSpike thermometer reads 143°F (62°C) when inserted into the thickest part of the chop, 15 to 20 minutes.

Remove the skillet from the oven and let the pork rest for 5 to 10 minutes before serving.
