Recipe Preparation
- 1/3 cup Crunchy Salted Peanut Butter
- 2 Tbsp. Unsalted Butter, melted
- 1/4 cup + 2 Tbsp. Powdered Sugar
- 1/2 tsp. Vanilla Extract
- 3.5 oz. Dark Chocolate, chopped Powdered Sugar for dusting
Step Description
1
In a bowl, combine the peanut butter, butter and vanilla extract. Slowly pour in the powdered sugar a little at a time until fully combined.
2
Form the peanut butter into balls, eggs, or whatever shape of your choosing and place on a parchment covered sheet pan. Place in the fridge for 30 minutes.
3
While the peanut butter is chilling, temper the chocolate. Heat a small pot with an inch or so of water on the bottom over medium heat until it reaches a simmer. Place a heat-safe bowl on top of the pot and add in 2/3 of the chocolate. Stir frequently until all of the chocolate is melted and the temperature of your ThermoPro TP03B Instant-Read Meat Thermometer reads 115 degrees Fahrenheit.
4
Remove the bowl from the heat. Slowly stir the remaining chocolate into the bowl, a few chunks at a time, until the thermometer reads approximately 80 degrees. Quickly place the pot back onto the heat and stir until the chocolate reads 85-89 degrees.
5
Carefully dip each of the peanut butter pieces into the chocolate, using a fork underneath the peanut butter so extra chocolate drips off of the chocolate. Set the chocolate covered peanut butter bites on a parchment covered sheet pan and allow to fully cool so the chocolate hardens. After they harden, you can place them in the fridge for a few minutes to firm up.
6
Dust each of the bites with sifted powdered sugar and enjoy.
