Recipe Preparation
- 2 sirloin steaks
- 2 tbsp smoked BBQ seasoning
- 1 tbsp olive oil
- 2 potatoes
- 1 tbsp butter
- 1 tbsp yellow mustard
- 1/2 cup heavy cream
- 1 tbsp chili flakes
- 1/2 tsp salt
- 3 tbsp shredded mixed cheese
- 1 tsp chopped parsley

Grill the Steaks: Marinate the sirloin steaks with olive oil and BBQ seasoning. Use a ThermoPro Twin TempSpike to monitor the temp of your steak. Insert the probes into the meat and set the target temperature to 124°F (51°C). Grill the steaks over direct heat, making sure to cook both sides evenly. Once the internal temperature reaches 125°F (52°C), remove from the grill and let rest for 10 minutes.

Fry the Fries: Cut potatoes into strips. Heat vegetable oil in a pan to 320°F (160°C). Fry the potato strips slowly until they become golden and crispy. Remove and toss with a pinch of salt and grated Parmesan cheese.

Cook the Sauce: In a skillet, melt the butter. Add heavy cream, yellow mustard, chili flakes, and salt. Bring to a gentle boil, then stir in the shredded cheese and cook until thickened. Finish with chopped parsley.
