- 3 potatoes
- 1 tbsp Old Bay seasoning
- 1/2 tbsp sweet paprika
- 1 tbsp chili powder
- 1 cup flour
- Salt to taste

Peel the potatoes. Place chopsticks or skewers along both sides, then cut across and lengthwise at even intervals. This prevents cutting all the way through and keeps the potato intact.

In a bowl, add the flour and all seasonings. Mix well, then coat the potatoes evenly with the mixture.

Heat oil to 280°F (138°C). Use a ThermoPro TP510 Digital Instant-Read Oil Thermometer to make sure your oil has been heated to the right temperature. Add the potatoes and fry. Maintain a steady oil temperature to avoid burning. Remove when cooked to the desired doneness.
