Deep-Fried New York Strip in Chili Oil

  • 1 lb sirloin steak
  • 1 cup crushed chili flakes
  • 1 head garlic, sliced
  • 1 tbsp white sesame seeds
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp ground cinnamon
  • 2 tsp salt
  • 1 tbsp ground cumin
  • 20 oz vegetable oil

In a heatproof container, combine all the seasoning ingredients. Heat the vegetable oil to 340°F (170°C), then carefully pour it over the seasonings. Use a ThermoPro Lightning One-Second Instant-Read Meat Thermometer to make sure the oil has reached the correct temperature. Stir well to combine and let sit for 20 minutes.

After 20 minutes, strain the chili oil, then heat it up again, this time to a temperature of 350°F (175°C).

Once the oil reaches the right temperature, add the steak and deep-fry each side for about 1 minute. Remove when the internal temperature reaches your desired doneness (cook to 120°F (49°C) for rare). Let the steak rest for 5 minutes before slicing and serving.
