Season prime rib with salt and pepper after letting it sit out for at least 6 hours.

To properly monitor its internal temperature as it cooks, insert a ThermoPro TempSpike Truly Wireless 500-ft Meat Thermometer into the prime rib. Set the target temperature to 135°F (57°C).

Heat oven to 500°F (260°C). Cook prime rib at a rate of 5 minutes per pound (for example, cook 40 minutes for an 8 lb prime rib).

Once the cooking time is up, turn off the oven and leave the door shut for 2 hours. Do not open the oven door or touch the meat during this time.

When the prime rib finally reaches the target temperature (whether or not the 2 hours is up), remove it from the oven.
