- 650g chicken thigh fillets (no bones or skin)
- 2 tsp smoked paprika
- 2 tsp cayenne pepper
- 2 tsp garlic powder

- 1 cup cornstarch
- 2 cups plain flour
- Vegetable oil (for frying)
For the Dipping Sauce:
- Apple cider vinegar
- Olive oil
- Soy sauce
- Flour
- Hot sauce

To begin this chicken poppers recipe, cut the chicken breasts into small cubes.

Add to a bowl and mix the cayenne pepper, garlic powder, and pepper along with the buttermilk. Liberally coat the chicken breasts in the batter. Cover with food wrap, and chill in the fridge for several hours.

For the dipping sauce, mix apple cider vinegar, olive oil, soy sauce, cornstarch, and hot sauce in a pan and simmer at medium heat until properly blended.

Once the batter has been sufficiently chilled, mix flour and smoked paprika in a big bowl. Cover the battered chicken in the flour mix.

Heat oil in a frying pan over high heat. Use a ThermoPro Lightning One-Second Instant-Read Meat Thermometer to determine if the oil has reached an optimal frying temperature of 327°F (164°).

Fry until golden brown. Remove the fried chicken poppers from heat. Drain on a paper towel and let the chicken poppers rest for a few minutes.
