- 3 lb pork belly
- 10 cloves garlic
- 1 onion
- 1 bunch parsley stems
- 1 tbsp salt
- 1 tbsp whole peppercorns
- 2 habanero peppers (optional)
- Dipping Sauces:
- Guacamole
- Queso blanco
- Pico de gallo
Step Description

Score the fat cap of the pork belly and cut into ¾-inch slices. Add to a pot along with garlic, onion, parsley stems, salt, peppercorns, and habanero (if using). Cover with water and simmer for about 2 hours. Remove and let cool.

Heat oil in a pan and use a
ThermoPro TP450 Infrared Thermometer
to ensure the temperature reaches 325°F–330°F (163°C–166°C). Fry the pork belly slices for about 6 minutes until lightly golden.

Remove the pork and increase oil temperature to 350°F (177°C). Return pork to the pan and fry again until extra crispy.

Season with salt and serve hot with guacamole, queso blanco, and pico de gallo.
