- 2 lbs Iberian pork ribs
- 3 tbsp jam

Marinate the Ribs: Coat the Iberian pork ribs with jam, place them in a vacuum-sealed bag, and vacuum-seal to reduce marination time. Refrigerate for at least 2 hours. If vacuum equipment is not available, use more jam and marinate for a longer period.

Cooking: After 2 hours, take the ribs out of the refrigerator. Use a ThermoPro Twin TempSpike Dual-Probe Meat Thermometer to make sure you reach the ideal temperature. Insert the probe into the thickest part of the pork ribs and set the cooking temperature to 140℉. Place the ribs in the oven. The app will alert you when it is done.

Glazing: When the internal temperature is close to 140℉, brush an additional layer of jam on the surface of the ribs. Remove from the oven once the internal temperature reaches 140℉. Serve and enjoy!
