Loaded Duck Tacos

  • 2 duck breasts
  • Seasoning
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3-4 tortillas
  • 1 carrot, shredded
  • 1 scallion, thinly sliced
  • 1 cup radish sprouts, diced
  • 1 cup cilantro or parsley leaves
  • 1 lime
  • 2 tbsp green onion, chopped
  • Honey
Step Description

Preheat your griddle to about 350°F (177°C) and keep it on the low setting. This will give the duck a slow and steady cook through the fat layer.

Cross cut the fat side of the duck breast and season well.

Lather the griddle plate with olive oil and butter. Carefully lay the duck on the griddle, fat side down.

Give the duck about 10-15 mins to cook and crisp. While the duck cooks, cut up all the veggies and set them to the side.

Flip the duck and apply butter to the backside of the griddle. Throw down the tortillas on the butter.

Flip the duck and let cook for another 5-10 mins.

Flip tortillas after 1-2 mins and brown up the other side. Remove and place on the prep area.

Use a ThermoPro Lightning One-Second Instant-Read Meat Thermometer to determine when the duck meat has been fully cooked. Aim for an internal temp between 125°F and 135°F (52°C and 57°C).

Remove duck and allow to rest for 5 mins. Cut the duck into 1/4” slices, mix in with veggies, construct tacos, and finish with a lime squeeze + honey drizzle.
