Recipe Preparation
- 4 burger patties
- 4 slices cheddar cheese, cut into quarters
- 2 sheets puff pastry, halved
- 8 strips thick-cut bacon, uncooked
- 1 large egg, lightly beaten
- 1 tsp sesame seeds

Preparation: Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

Bacon Weave & Burger Assembly: Create a bacon weave using 4 slices of bacon. Divide each burger patty into two halves. Lay them on the bacon weave. Place 4 quarters of cheese in between each half patty and tightly seal the sides.

Insert the dual temperature probes of the ThermoPro Twin TempSpike 500-ft Wirefree Meat Thermometer into your patties for accurate temperature monitoring. Cook the assembly in a cast-iron pan over medium-high heat until it reaches medium rare.

Pastry Preparation: Remove the burgers from the pan and set them aside. Lay out a rectangle of puff pastry. Spread a portion of the burger sauce in the center. Place a wrapped burger onto the mustard-covered area. Trim away any excess puff pastry. Fold the dough around the wrapped burger to form a tight package. Use the egg wash to seal the sides. Sprinkle sesame seeds on top. Repeat this for the remaining burgers.

Baking: Place the prepared burgers on the baking sheet. Bake for about 20 to 25 minutes until the internal temp reaches 165°F (74°C).

Serving: Allow the burgers to rest for 5 minutes. Serve them your favorite burger sauce.
