Recipe Preparation
- 1 ripe pineapple
- 3 lb pork back ribs
- 3 cups of your favorite BBQ sauce
BBQ Rub:
- 1/3 cup smoked paprika
- 1/4 cup brown sugar
- 1/4 cup garlic powder
- 2 tbsp chili powder
- 1 tbsp cayenne pepper
1 tsp salt and pepper
Step Description

Leaving the stem on, peel the pineapple and cover it with BBQ sauce.

Cover the ribs on all sides with the ingredients for the rub.

Wrap the ribs around the pineapple. Use bamboo skewers to hold it in place. To accurately measure internal temperatures as you cook, insert both probes of a ThermoPro Twin TempSpike Plus Wireless 600-ft Dual-Probe Meat Thermometer into the ribs and pineapple.

Wrap in aluminum foil and cook in a preheated oven at medium-high heat.

Remove from heat once internal cooking temperatures have reached 145°F (63°C), and remove from heat.

Remove the stem, and chop the pineapple and ribs into pieces. Use the stem as a centerpiece, and arrange the cut pineapple and ribs around the stem. Garnish with BBQ sauce, and serve.
