- 2.5 lbs lamb chops
- 1 tbsp salt
- 1 tbsp chili powder
- 1 tbsp paprika
- 1 tbsp black pepper
- 1 tbsp cumin
- 1 tbsp garlic powder
- 1 tbsp onion powder
- ½ tbsp dried rosemary
- 1 tbsp olive oil

Preheat the charcoal grill. Trim excess sinew and fat from the lamb chops. In a small bowl, mix all the seasonings except the olive oil. Lightly coat the lamb with olive oil, then evenly rub the seasoning mixture onto the surface. Let it marinate for 20 minutes.

Place the marinated lamb chops over high heat on the charcoal grill, allowing the fat to render. Flip the lamb once the surface turns golden and slightly charred, ensuring all sides cook evenly.

Move the lamb to the cooler side of the grill, cover the lid, and continue cooking. For best results, use ThermoPro TP19 Digital Instant-Read Meat Thermometer to make sure the center temperature reaches 125°F (52°C). Remember to rest the meat for over 3 minutes.
