Recipe Preparation
- 2 lbs salmon fillet
- ½ tbsp minced garlic
- ½ tbsp minced shallots
- ⅓ tbsp olive oil
- Fresh spinach
- 2 sheets of puff pastry (20×30 cm each)
- ⅓ cup cream cheese
- ⅓ cup shredded cheese
- 1 egg
- Salt and black pepper to taste

Prepare the Salmon: Season the salmon with salt and set aside.

Make the Spinach Filling: Heat olive oil in a skillet. Add the minced garlic and shallots, then sauté the spinach until wilted. Stir in the cream cheese and shredded cheese, cooking until the mixture thickens. Season with black pepper.

Assemble the Pastry: Place one sheet of puff pastry on a flat surface. Lay the salmon on top and spread the spinach mixture over the salmon. Cover with the second sheet of puff pastry and press the edges together to seal. Brush the surface with beaten egg.

Bake the Salmon: Use a ThermoPro Twin TempSpike Dual-Probe Meat Thermometer to make sure the salmon is cooked to ideal level of doneness. Insert the probe into the thickest part of the salmon and set it to 135°F (57°C). Place it in the oven and bake until the app alerts you that it has reached the target temperature. Remove from the oven and serve.
