  • 3 Pounds Boneless Skinless Chicken Breasts
  • ¼ cup BBQ Dry
  • ½ gallon of water
  • ½ cup White Sugar
  • ½ cup Kosher Salt
  • 6-8 Bay Leaves
  • 2 tablespoons Whole Peppercorns

Combine Water, salt sugar, bay leaves and peppercorns in a large bowl, whisk until salt and sugar are dissolved.

Place the chicken breasts in a container and pour over the chicken brine. Cover and refrigerate for 4-6 hours or overnight.

Preheat the pellet grill to 350 degrees F.

Remove the chicken from the brine and pat dry with paper towels, season chicken on both sides then place on the pellet grill.

Use the ThermoPro TP620 Instant-Read Meat Thermometer to measure the chicken temp. Once the chicken has reached about 140 degrees F. brush with BBQ sauce on chicken breasts then continue cooking until you reach an internal temperature of 165 degrees F.

Let chicken breast rest for 5 minutes before slicing.
