  • 2 lbs boneless short ribs
  • 1 white onion
  • 1 red onion
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 tomato
  • 1 sweet chili pepper
  • 1 avocado
  • 3 sprigs fresh cilantro
  • 5 cloves garlic
  • 1 orange
  • 1 lime
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp ground cumin

Marinate the Beef: In a bowl, combine the short ribs with olive oil, smoked paprika, chili powder, salt, cumin, minced garlic, chopped cilantro, and fresh orange juice. Marinate for 1 hour.

Sear the Beef: Heat a skillet over medium-high heat. Sear the marinated beef on both sides until the internal temperature reaches about 120°F (49°C) for rare. Use a ThermoPro TP19H Digital Instant-Read Meat Thermometer to measure the temperature accurately and fast. Remove from the pan and let rest for 10 minutes.

Cook the Peppers & Onions: Slice the bell peppers and peeled onions into strips. Sauté in the skillet until softened. Season with salt, black pepper, and a splash of soy sauce. Add the sliced beef back into the pan, stir well, and remove from heat immediately.

Make the Tomato Salsa: Dice the onion, tomato, sweet chili, and cilantro. Mix with lime juice, salt, and olive oil until well combined. Serve fresh alongside the beef and vegetables.
