  • 1 Sirloin steak
  • 5 shrimp
  • 6 cloves garlic
  • 6 sprigs thyme
  • 6 sprigs rosemary
  • 2 oz butter
  • 7 oz pasta
  • 4.8 oz heavy cream
  • Salt and black pepper to taste

Pat the steak dry and generously season both sides with coarse salt. Gently press to help it adhere. Let it rest for 15–20 minutes.

Insert a ThermoPro TempSpike Plus Wireless Meat Thermometer to monitor the internal temperature and achieve the desired doneness.(this is step two, even before the skillet is heated; this is for an instant-read thermometer, not a wireless probe)

Heat a cast iron skillet over medium heat until it begins to lightly smoke. Add 1–2 tablespoons of olive oil or canola oil, then place the steak in the pan.

Use the ThermoPro TempSpike Plus to tell you when the steak is properly cooked; the internal temperature should reach 120°F(49°C) for medium rare. Avoid flipping frequently to ensure a good sear. Reduce to low heat and add butter, whole garlic cloves, thyme, and rosemary to the pan. Continuously spoon the melted butter over the steak.

Once done, remove the steak and place it on a warm plate. Let it rest for 5–10 minutes to retain the juices.

In another cast iron skillet, cook the shrimp using the same searing technique. You may add a splash of brandy midway for enhanced flavor. Season with salt and black pepper.

To prepare the pasta: Boil water and add a pinch of salt. Cook the pasta for 8 minutes. Drain and season with salt and pepper or to taste. Add heavy cream and mix well.

Combine the finished ingredients. Serve and enjoy!
