- 3 lbs ribeye steak
- 2 avocados
- 1/2 red onion
- 1 oz fresh cilantro
- 2 cups mozzarella cheese
- 10 tortillas
- Salt, to taste
- Crushed black pepper, to taste
- Garlic powder, to taste
- Olive oil, as needed

Season the ribeye steak with salt, garlic powder, and crushed black pepper. Set aside.

Heat a skillet with olive oil and briefly sear the steak on all sides until browned and aromatic. Before it is fully cooked, transfer the steak to an oven preheated to 280°F (138°C) and cook until the internal temperature reaches 124°F (51°C). Remove and let rest for 10 minutes before slicing.

Place mozzarella cheese on the tortillas and heat until the cheese melts.

To make the guacamole, mash the avocados in a bowl and mix in diced onion, chopped cilantro, lime juice, salt, and crushed black pepper until well combined.
