- Wagyu NY strip steak
- Olive oil
- Sourdough bread
- Egg, fresh
- Rosemary, chopped
- salt and pepper

Cover the steak in olive oil and season with salt and pepper.

Reverse sear steak by warming up the steak in a grill to 125°F. Use a ThermoPro Lightning One-Second Instant-Read Meat Thermometer to determine when it has reached the target temperature.

Sear the steak on a griddle in hot olive oil for 1-2 mins on each side. Remove from heat and let rest.

Cover 2 slices of sourdough bread in olive oil. Cook the bread on a griddle along with an egg.

Slice the steak into thin strips, and place on the toasted bread. Top with the fried egg and rosemary.
