Recipe Preparation
- Pork shoulder
- Beer (enough to partially cover the meat)
- 3 tsp black pepper
- 3 tsp salt
- Bay leaves
- BBQ sauce (as needed)
Recipe Instructions

Rinse the pork shoulder and place it in a dish. Pour in beer until the meat is partially covered. Season with salt, black peppercorns, and bay leaves. Refrigerate overnight to marinate thoroughly.

Remove the pork shoulder, drain excess beer, and pat dry with paper towels.

Preheat the oven to 280°F (140°C).

Heat a little oil in a cast-iron skillet or pan, then sear the pork shoulder on all sides until browned to lock in the juices.

Insert the probe of a ThermoProTempSpike Plus into the thickest part of the pork shoulder. Transfer the seared meat into a baking dish and place it in the preheated oven.

Slow roast until the internal temperature reaches 165°F (74°C) as shown on the TempSpike Plus, then remove from the oven.

Brush a layer of barbecue sauce evenly over the pork shoulder (you can brush 2 layers for stronger flavor).

Increase the oven temperature to 360°F (180°C).

Return the pork shoulder to the oven and continue roasting until the sauce caramelizes and forms a beautiful glaze.
