Cheesy Buffalo Chicken Dip

  • 1.5 lbs. boneless skinless chicken breast, thinly sliced
  • 1.5 tbsp. avocado or olive oil
  • Juice from 1/2 lemon
  • 1 tsp dried dill
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup buffalo sauce
  • 1/3 cup ranch dressing
  • 1/3 cup mayo
  • 2 tbsp milk or coconut milk
  • 1 cup shredded cheese (cheddar recommended)
  • Chopped chives
  • Sliced carrots and celery
  • Chips or crackers

Preheat your oven to 375°F (190°C).

In a bowl, combine the oil, lemon juice, dill, parsley, garlic powder, onion powder, salt, and pepper. Toss the chicken in the mixture and let it marinate for 5–10 minutes.

Place the chicken in a single layer on a sheet pan or in a glass dish. Bake for about 20 minutes, or until the internal temperature reads at least 165°F (74°C) on your ThermoPro TP15H Instant Read Thermometer . Shred the chicken with two forks.

In a large bowl, combine buffalo sauce, ranch dressing, mayo, and milk. Mix in the shredded chicken.

Pour the chicken mixture into a small baking dish. Top with shredded cheese. Bake for about 20 minutes, or until the mixture is bubbly.

Remove from the oven and top with chopped chives. Serve with your favorite veggies, chips, or crackers.
