- 2 chicken breasts
- Pasta for 2 servings
- 1 tsp garlic powder
- Salt, to taste
- Black pepper, to taste
- 1 cup flour (for coating)
- 2 eggs (for coating)
- 2 cups breadcrumbs (for coating)
- 2 tbsp olive oil
- chili flakes to taste
- 1 shallot, finely chopped
- 3 cloves garlic, minced
- 1 tbsp tomato paste
- 2 cups tomato sauce
- ½ cup cream

Slice the chicken breasts into thin, even pieces. Use a meat mallet to tenderize the thicker parts for a softer texture.

Season the chicken with garlic powder, salt, and black pepper. Coat each piece in flour, dip in beaten egg, then cover evenly with breadcrumbs.

Heat oil to 320°F (160°C), then lower to medium-low heat. Fry the chicken while keeping the oil temperature between 300–320°F (150–160°C) until golden brown and cooked through. This ensures a crispy crust. Make sure you use a ThermoPro TP510 Oil Thermometer to monitor your oil temperature.

In a skillet, heat olive oil and saute chili flakes, chopped shallot, and minced garlic until fragrant. Add tomato paste and tomato sauce (or meat sauce), bring to a boil, then stir in cream. Season with salt and black pepper.

Add the cooked pasta to the sauce and mix well before serving.
