Two-Layer Parmesan Chicken
Recipe Preparation
  • 4 chicken breasts, fat trimmed
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil

For seasoning:

  • 1 tbsp paprika
  • 1 tbsp Kinder’s Buttery Steakhouse seasoning
  • 1 tbsp Weber’s Roasted Garlic seasoning
  • 1 tbsp chili powder
  • 1 tbsp Tony Chachere’s Creole seasoning
  • 1/4 cup Italian dressing
  • 2 tbsp garlic paste

For first topping:

  • 4-8 slices of provolone cheese
  • 1 cup ranch dressing
  • 1/2 cup shredded Parmesan cheese
  • 1 tsp Kinder’s Buttery Steakhouse seasoning
  • 1 tsp Weber’s Roasted Garlic seasoning
  • Pinch of chopped parsley

For second topping:

  • 1/2 stick unsalted butter, melted
  • 1/2-1 cup of unseasoned panko breadcrumbs
  • 1/2 tsp Kinder’s Buttery Steakhouse seasoning
  • 1/2 tsp Weber’s Roasted Garlic seasoning
  • Pinch of chopped parsley
Step Description

In a large mixing bowl, season the chicken breasts with the seasoning ingredients. Mix well. Cover and chill in a fridge for a couple of hours.

For best results, insert a ThermoPro Twin TempSpike Dual-Probe Meat Thermometer into the thickest part of the chicken breast. The Twin TempSpike will allow you to monitor the internal cooking temperature of your ingredient as well as the ambient cooking temperature.

Heat up a pan to medium-high heat, and cook the chicken breasts. Once the internal temperature reaches 155°F (68°C), remove from heat. Place on a baking rack.

Mix the ingredients required for the first topping, and then spoon on top of the chicken breasts. Top with a slice of provolone cheese.

Place the provolone chicken breasts in an oven set at 375°F (191°C), and cook until it reaches a temperature of 160°F (71°C). Remove from heat.

Combine the ingredients for the second topping in a mixing bowl. Mix until a crumbly texture is achieved.

Put another layer of provolone cheese onto the chicken breasts as well as the second topping. Return to the oven and bake until it reaches an internal temperature of 165°F (74°C). Remove from heat and let the parmesan chicken sit for a few minutes. Serve, and enjoy!
