- 2 lbs chicken wings
- 1 tsp garlic powder
- 2 tsp onion powder (divided)
- 1 tsp chili powder
- 1 egg
- ⅓ cup flour
- Sweet potato starch (for coating)
- 1 oz butter
- 3 tbsp mayonnaise
- 3 cloves garlic (minced)
- 1 tsp dried thyme leaves
- 1 tbsp grated Parmesan cheese
- A handful of parsley (finely chopped)

Season the chicken wings with garlic powder, onion powder, chili powder, salt, and black pepper. Mix well, then add one egg and flour. Stir until evenly coated and set aside.

In a separate bowl, mix sweet potato starch, onion powder, and a pinch of salt. Coat the marinated chicken wings evenly with this dry mix.

Heat oil to 300°F (150°C), then lower to medium-low heat. Fry the chicken wings until they float and turn golden brown. Remove and drain excess oil. Make sure you use a ThermoPro TP510 Oil Thermometer to monitor your oil temp.

To make the Garlic Mayo Sauce: Melt butter in a skillet, add minced garlic and sauté until fragrant. Add dried thyme leaves and cook briefly. Stir this mixture into mayonnaise, then add Parmesan cheese and chopped parsley. Mix thoroughly, then toss the fried chicken wings in the sauce until evenly coated.
