Recipe Preparation

For the Marinade:

  • 1 boneless chicken thigh (per sandwich)
  • 1 cup buttermil
  • 1/2 cup pickle juice
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chipotle powder
  • 1 tsp mixed herbs
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the Honey Sriracha Sauce:

  • 1 tbsp kewpie mayo
  • 1/2 tbsp sriracha
  • 1/2 tsp honey
  • 1 tsp smoked paprika

For the Flour Coating:

  • 2 cups all-purpose flour
  • Same seasoning blend as marinade

For assembling:

  • Potato buns
  • Sliced pickles
  • Shredded iceberg lettuce

Marinate the chicken by combining the marinade ingredients in a bowl. Add the chicken to the marinade, ensuring that it is fully covered. Cover the bowl and refrigerate for 2 hours or overnight for optimal flavor.

Prepare the honey sriracha sauce by combining these ingredients in a bowl. Whisk until smooth and well combined, then set aside.

In a shallow dish, mix all-purpose flour and the same seasoning blend as used in the marinade. Stir well.

Remove the chicken from the marinade, letting the excess drip off. Dredge the chicken in the flour, pressing lightly to ensure a good coating. Shake off any excess flour.

Heat oil in a deep fryer or large skillet to 350°F (177°C). Use a ThermoPro Lightning One-Second Instant-Read Meat Thermometer to check to make sure the oil is at the correct temperature. There should be enough oil to fully submerge the chicken.

Carefully place the breaded chicken into the hot oil. Fry until the chicken reaches an internal temperature of 165°F (74°C) as indicated by the Lightning. Remove from oil and drain on a paper towel-lined plate.

Begin assembling the sandwich by spreading the honey sriracha sauce on the bottom half of a toasted potato bun. Starting with the fried chicken, dress the sandwich with sliced pickles and shredded lettuce. Top with the other half of the bun, and you’re done! Enjoy the honey sriracha chicken sandwich!
