Recipe Preparation
- Pork butt, 10-12 lbs
- Sriracha (or mustard or other hot sauce)
- BBQ rub
- 2 cups Coke (or beer, soda, juice)

Get a pork butt around 10-12 lbs. Score the fat side, and use sriracha as a binder (can also use mustard or other hot sauce). Cover completely using your favorite BBQ Rub.

Set your smoker to 225°F (107°C), and set your custom temperature of your ThermoPro TP960 TempSpike 500-ft Truly Wirefree Meat Thermometer to an internal temperature of 170°F (77°C). Once this alarm automatically goes off, remove the pork butt from heat.

Place the pork butt in a 1/2 pan with 2 cups of Coke (beer, soda, or juice will also do). Cover with foil and put it back in the smoker to continue to cook.

Remove from heat once the TempSpike alerts you that the pork butt has reached an internal temperature of 203°F (95°C). Rest for 1 hour.
PROTIP: Use a foil 1/2 pan under the pork butt to catch the fat and use this fat when you add the Coke, beer, or apple juice when wrapping! Fat = Flavor!
