Slice the top of the ham thinly while leaving each slice attached at the base. Using mustard as a binder, season with your favorite AP rub.

Heat up your smoker up to 275°F (135°C) and insert ham. You can also cook ham in oven, but the smoker adds extra flavor.

In a heated pot, mix together brown sugar, maple syrup, apple cider vinegar, more AP rub, and the bourbon of your choice.

Add ketchup or barbecue sauce, bring to a boil, then let simmer for 15 to 20 minutes until it thickens.

Once the ham reaches an internal temperature of 120°F (49°C), turn its position and coat with the glaze. Let it cook until it reaches 145°F (63°C), then apply another coat of glaze before removing from heat. Serve and enjoy this bourbon glazed ham!
