Mushroom-Stuffed Chicken Pillow

  • 1 whole chicken, deboned
  • 21 oz mushrooms, diced
  • 1/2 onion, finely diced
  • 4 cloves of garlic, finely diced
  • 10 sprigs of lemon thyme, leaves picked and finely chopped
  • 3 tbsp of olive oil
  • 1.8 oz of butter
  • salt and pepper, to taste

Cover the deboned chicken with olive oil, salt, and pepper.

Slice the onion, garlic, thyme, and mushrooms, then saute in a frying pan over high heat for 3-4 minutes using half of the butter and 2 tbsp of olive oil. Add the onion first, then the thyme, garlic and mushrooms once the pan has heated up.

Spread the cooked mixture on top of the chicken, then wrap up into a “pillow” by tying with twine.

For best results, use a Twin TempSpike Plus Wireless 600-ft Dual-Probe Meat Thermometer. Insert the probe into the deepest part of the chicken, then place into an oven at 375°F (190°C).

Once the chicken has reached 160°F (71°C), remove from heat and let rest. Slice, serve, and enjoy!
