  • 1 whole chicken
  • Olive oil

Cut out the spine using a strong pair of kitchen shears. Turn over and flatten by pressing down on the breastbone.

Cover liberally with olive oil. Season using your favorite seasonings.

Place the spatchcock chicken on a tray. Surround the chicken with pieces of cut potatoes that have also been covered in olive oil and seasonings.

To accurately monitor the internal temperature during the cooking process, use the ThermoPro Twin TempSpike 500-ft Wireless Dual-Probe Meat Thermometer. Insert each probe deep into the thickest part of the chicken (such as the breast or thigh). Using the ThermoPro app, select the “Poultry” setting and choose “165°F” (74°C) as the target temperature.

Cook on your grill at 400°F (204°C) until the target temp is reached. Remove from heat and let sit for a few minutes. Serve and enjoy roadkill chicken!
