  • 5 lbs leg of lamb
  • 2 tbsp yellow mustard
  • 2 tsp salt
  • 2 tsp chili powder
  • 2 tsp black pepper
  • 2 tsp garlic powder
  • 2 tsp ground cumin
  • 1 tsp dried rosemary
  • 3 tbsp olive oil
  • 0.5 lbs onion
  • 1 lbs potatoes
  • 0.5 lbs carrots
  • 3 heads of garlic

In a bowl, combine all the seasonings—yellow mustard, salt, chili powder, black pepper, garlic powder, ground cumin, rosemary, and olive oil—into a paste.

Score the surface of the lamb leg with a knife to allow for better flavor absorption. Rub the seasoning paste thoroughly over the lamb. Insert a ThermoPro Twin TempSpike Wireless Meat Thermometer into the thickest part of the lamb and set the target temperature to 140°F (60°C). It will notify you via mobile app when the desired temperature is reached.

In a roasting pan, arrange the potatoes, carrots, onions, and whole garlic heads. Season the vegetables lightly and place the lamb leg on top.

Roast the lamb in a 360°F (182°C) oven. Flip the lamb halfway through cooking to ensure even browning. Remove the lamb once its internal temperature reaches 140°F (60°C) and let it rest before serving. Enjoy!
