For the Roast Beef:
- 5 lbs ribeye roast
- 2 tbsp steak seasoning
- 1 tbsp olive oil (for searing)
For the Caramelized Onions:
- 2 large white onions, thinly sliced
- ¼ cup butter
- 1 tbsp brown sugar
- 1 tbsp Worcestershire sauce
- ½ tsp thyme
- Salt & black pepper to taste
For the Sandwich Build:
- 1 large crusty bread loaf (sourdough or French bread)
- 6 slices sharp cheddar cheese
- 1 cup mayo
- 1 tbsp honey
- 1 tbsp chopped chives

Step 1. Prepare the Roast Beef
Allow the beef to thaw and rest at room temperature. Generously rub the roast with your BBQ dry seasoning, making sure all sides are coated.
Step 2. Sear the Beef
Heat a skillet over medium-high heat. Add a little olive oil and sear the entire surface of the roast until it’s golden brown and crusted.
Insert a ThermoPro TP16 Digital Meat Thermometer with Large LCD into the center of the beef. Transfer the beef to a preheated 400°F oven and set the target temperature to 120°F for a medium-rare result.
Step 3. Roast Beef
When the leave-in meat thermometer alerts you that the beef has reached 120°F, remove it from the oven and let it rest for 15 minutes before slicing.

Step 4. Caramelize the Onions
In a skillet, melt the butter over medium heat. Add sliced onions and season with salt, pepper, brown sugar, Worcestershire sauce, and thyme. Add about 1/2 cup of water, cover, and simmer until the onions are soft, golden, and jammy.
Step 5. Toast the Bread
Slice the bread horizontally and toast in a 390°F oven until crispy. Mix mayo, honey, and chives in a bowl. Spread generously on one piece of bread.
Step 6. Assemble & Melt the Cheese
Layer the sliced roast beef on the bottom half of the bread, then top with cheddar cheese slices. Place the sandwich bottom back in the oven at 390°F until the cheese is bubbly and melted.
Step 7. Top & Serve
Pile on the caramelized onions, then cap it with the top half of the bread.
