Recipe Preparation
- 2 lbs chicken thighs
- 1 tsp salt
- 1 tbsp minced ginger
- 1 tbsp minced garlic
- 1/2 lemon, juiced
- 2 tbsp mayonnaise
- 1 tsp sweet paprika
- 1 tsp chili powder
- 1 tsp cumin powder
- 1 tsp garam masala
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp cornstarch
- 2 tbsp smoked chili flakes (or smoked paprika for milder heat)
- 34 fl oz vegetable oil (1.5 L)

Prep the Chicken: Remove the skin from the chicken thighs and place the meat in a large mixing bowl. Add salt, minced ginger, minced garlic, and lemon juice. Mix well and marinate for 1 hour.

Season: Add all remaining spices as well as mayonnaise, cornstarch, and smoked chili flakes to the bowl. Mix thoroughly until the chicken is evenly coated. Let it sit for another 30 minutes.

Heat the Oil: Pour the vegetable oil into a deep fryer or heavy-bottomed pot. Use a ThermoPro TP510 Digital Instant-Read Oil Thermometer to make sure the oil is suitable for frying. Once it reaches 340°F (170°C), carefully lower the marinated chicken thighs into the hot oil.

Fry: Maintain medium to medium-low heat. Fry the chicken for 10–15 minutes, or until golden brown and fully cooked inside.
