Steak Bites with Chimichurri Sauce
Recipe Preparation
  • Bone-in ribeye
  • Olive oil
  • Salt and pepper
  • Butter
  • Yellow potatoes
  • Minced garlic
  • Heavy cream

Chimichurri sauce recipe

  • 1/2 cup parsley, chopped
  • 1/2 cup virgin olive oil
  • 1 tbsp garlic, minced
  • 2 tsp oregano
  • 1 tsp salt
  • 1 tsp pepper
  • Squeeze of lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp chili oil or red pepper flakes, crushed
Recipe Instructions
1
Coat bone-in ribeye with olive oil. Season both sides of the steak with salt and pepper.
2
In a heated pan, add oil along with the steak. Cook while flipping over a few times. Use a ThermoPro Lightning One-Second Instant-Read Meat Thermometerr to help you determine when it has reached your desired temperature. For medium-rare, this would be 130°F-135°F (54°C-57°C). Remove from heat before reaching this temperature.
3
Move the steak to a cutting board, and add butter on top. Cut steak into bite-sized pieces, then return to pan and cook until reaching your desired temperature.
4
For mashed potatoes, boil yellow potatoes with skins on until soft, then mash. Add butter, minced garlic, heavy cream, salt and pepper, and mix well.
5
Prepare the ingredients for the chimichurri sauce, and cook in pan until ready.
6
Serve the steak on a bed of mashed potatoes, topped with the chimichurri sauce. Enjoy the steak bites!
