Asparagus-Stuffed Flank Steak

Recipe Preparation
- 1 flank steak (2-3 lb)
- ¼ lb asparagus
- ½ cup parmesan cheese
- Salt and pepper
- Oil
- Butcher twine
Step Description

Set grill for medium-high direct heat, and grill the asparagus for 1-2 minutes. Remove from grill and let cool.

Butterfly the flank steak. Season generously with salt and pepper on both sides. On one side, place the cheese and grilled asparagus.

Roll the flank steak around the cheese and asparagus as tightly as possible, and tie it with twine. Insert a TP960 TempSpike Bluetooth Meat Thermometer cooking thermometer to help you monitor the steak’s internal cooking temperature during the cooking process.

Place the rolled-up flank steak on grill. Sear on all sides. Using the TempSpike, cook the steak until it reaches an internal temperature of 130°F (54°C) for medium-rare level of doneness. If not cooked to your preference, cover and continue to cook.

Remove from grill and rest for 5–10 minutes. Then slice and serve.
