- Boneless short ribs
- Polenta
- Garlic, rosemary, thyme
- All-purpose beef seasoning
- Olive oil
- Butter
- Parmesan cheese, grated
- Beef stock
Recipe Instructions
1
Season the short ribs evenly.
2
Place them in the smoker until the internal temperature reaches 165°F (74°C). Use a ThermoPro TP980 TempSpike Pro Wi-Fi Bluetooth Probe Meat Thermometer to accurately monitor your ingredients in real time.
3
Transfer the short ribs to a foil pan, add garlic, rosemary, thyme, and beef stock.
4
Seal tightly with foil and return to the smoker until the beef reaches 205°F (96°C) and becomes tender.
5
Remove the ribs, strain the braising liquid into another pan, and reduce by half.
6
Cook the polenta according to package directions, then stir in butter, Parmesan, salt, and black pepper.
7
Spread the cooked polenta on a greased baking sheet and refrigerate until set.
8
Cut the chilled polenta into squares.
9
Fry the polenta in a cast-iron skillet until golden brown on both sides.
10
1. To serve: plate the polenta with the short ribs, spoon over the reduced braising sauce, and enjoy!
