- 6 slices thick-cut bacon
- 10.6 oz (300 g ) ground beef
- 3.5 oz (100 g) cheddar cheese, shredded
- 2 tbsp BBQ rub
- Applewood or cherry wood chips, as needed
- BBQ sauce, to taste

Lay out the thick-cut bacon strips on a cutting board and pat dry with paper towels. Place a small amount of ground beef in the center of each bacon slice. Sprinkle with BBQ rub and top with cheddar cheese.

Roll tightly from one end to enclose the filling, then tie each roll securely with kitchen twine.

Smoke over low heat using wood chips. Mid-way during the process, brush the rolls with BBQ sauce and return to the grill or smoker.

Cook until the sauce caramelizes on the surface, or the internal temperature reaches 160°F (71°C). Use a ThermoPro TP19 for accurate temperature measurements that provide perfect results every time.

Once cooked, remove from heat and let rest for 5 min to retain juices. Serve, and enjoy!
