Baked Brie with Wine and Honey

Recipe Preparation
- 1 (8-ounce) whole Brie cheese wheel
- 2 tbsp dry white wine (sparkling or rosé also work)
- 1–2 tbsp honey
- 1 tsp fresh thyme, loosely chopped (optional)

Preheat oven or grill to 350°F (177°C).

Score the top of the Brie cheese by lightly cutting slits into the rind. Do not cut too deep. Place the cheese in an oven-safe skillet or dish. Top with wine and drizzle with honey.

Insert a probe from the
ThermoPro TP25
into the Brie, and transfer to the oven. Bake until the internal temperature reaches 110°F (43°C). Watch closely from this point. Remove once the cheese reaches your desired level of gooeyness. Do not exceed 130°F (54°C), or it will melt completely.

Garnish with thyme if desired. Serve with crostini, apples, or crackers.

Notes: The blooming rind on Brie is edible. For added flavor, top with nuts or dried fruit. Grapes pair wonderfully with Brie. For a savory version, bake as above and immediately top with pesto, roasted garlic cloves, and red pepper flakes.
