- 2 lbs skirt steak
- 1 cup chopped cilantro
- 4 cloves minced garlic
- Juice from 1 lime
- 3 tbsp olive oil
- 2 tbsp coconut aminos
- 1 tbsp honey
- 1 tsp cumin
- 1 tsp chili powder
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- Chopped tomato
- Chopped lettuce
- Chopped avocado
- Diced onion
- Tortilla shells
- Any other fixings you like

To prepare the marinade, combine the cilantro, garlic, lime juice, olive oil, coconut aminos, and honey in a large bowl. Add cumin, chili powder, salt, pepper, and paprika. Mix well.

Reserve 3 tablespoons of the marinade in a separate small bowl. Cut the skirt steak into 10–12 inch pieces.

Add the steak to the marinade and toss to coat. Cover the bowl and marinate in the refrigerator for 1–2 hours.

Preheat your grill to medium-high heat. Place the steak on the grill and cook for 45 seconds. Rotate 90 degrees for grill marks, then flip and repeat.

Skirt steak is best at 130°F (54°C) as it continues cooking off the grill. For more doneness, grill up to medium-well.

Depending on the thickness of your steak, you may need to cook it slightly longer. Always check with a meat thermometer for accuracy.

Slice or chop the cooked steak and toss it into the reserved marinade for extra flavor.

Assemble your tacos with steak, tomato, lettuce, avocado, onion, and any other favorite toppings. Garnish with fresh cilantro and enjoy!
